Six-In-One Cookie Dough
Let's be honest. Who has the time to make a gazillion different recipes for this year's Cookie Swap?! This Six-In-One Cookie Dough is the answer to your cookie baking needs. I call this the "Six-In-One Cookie Dough", but you could literally make many more variations with just this one dough! You could make Snickerdoodles, Peanut Butter Chip, a compost cookie with a ton of different toppings: the sky's the limit!
Cook time: 14-15 min | Prep time: 10 min | Serves: 18 | Yields: 18 servings
Ingredients:
2 cups all-purpose flour
1 cup mix-ins (M&M's, chocolate chips, toffee etc.)
½ tsp. baking soda
½ tsp. salt
¾ cup (1½ sticks) butter
1 cup packed brown sugar
½ cup granulated sugar
2 Tbsp. best quality vanilla
1 egg
1 yolk
Tools:
Stand mixer or hand mixer
Rubber spatula
Dry measuring cups
Ice cream scoop
Wire cooling rack
Directions:
Cream the butter, granulated sugar, brown sugar and salt in a mixer. Scrape between mixing to avoid lumps.
Add 1 egg, 1 yolk and the vanilla. Mix until combined.
Add the flour and baking soda and mix on medium speed. Scrape between mixing. Don't over-mix.
Gently fold in 1 cup of your mix-ins. You can add more if you like. You could even skip this step and top them later, after you scoop them out.
Refrigerate the mixture 2-3 hours or overnight until the batter firms up.
Preheat oven to 350° F.
Using an ice cream scoop, transfer the batter onto a silicone or parchment-lined sheet pan. Bake at 350° F for 13-14 minutes. Don't over-bake or your cookies won’t be soft and chewy.
Allow to cool on a wire rack and enjoy!
