Purple Yam Bars
Move over Red Velvet and basic sweet potatoes, there’s a new pretty color in town and it’s au-naturel! Meet the Purple Yam, also known as “Ube.” It’s pronounced [ooh-beh]. Fun to say, right? You may have seen this new trend of purple Instagram-worthy desserts: this is exactly what it is! Another important ingredient in this recipe is Eagle Brand® Sweetened Condensed Milk. In this dessert, it’s literally a perfect match, made for the holidays.

Purple Yam Bars
Yield: 12-16 servings

Total Time: 1 Hour 20 Minutes
The Crust:
2 cups Graham cracker crumbs
1/2 cup sugar
1 tsp. kosher salt
8 Tbsp. unsalted butter, melted
The Filling:
2 cups grated purple yams (thawed if frozen. You could also use whole Purple yams, cooked until tender (poked with fork and wrapped in moist paper towel in microwave for 7-8 minutes on high). These could easily be found at your local Asian market.
1- 14oz. can of Eagle Brand® Sweetened Condensed Milk
3 large eggs
2 tsp. pure vanilla extract
1 cup heavy cream
Powdered sugar for garnish is optional
Directions:
How to Make the Crust:
Preheat oven to 350°. Line an 8"-x-8" baking pan with parchment paper with two pieces overlapping each other with extra parchment coming up the sides of the pan. You can use binder clips to secure the parchment. In a bowl, add graham cracker crumbs, sugar, salt, and melted butter until combined and holds it’s shape when pressed together. Press into pan and bake until golden, 10 minutes.
How to Make the Filling:
2. Mix together all filling ingredients until evenly combined.
Bake:
3. Add filling to crust and bake until set, about for 48 to 50 minutes. To check doneness, bake until the center jiggles slightly; it will set up as it cools. Set aside to cool. Garnish by dusting powdered sugar on top. Slice into squares and enjoy!
