Old Fashioned Sweet Potato Donuts (with Honey Glaze)
What else is there to make with sweet potatoes other than the usual casserole? Old Fashioned Sweet Potato Donuts (with Honey Glaze) is the answer to that! This is hands down one of my top 3 donut recipes. The sweet potatoes give it that fall vibe and it’s literally the secret weapon to making it super moist and cakey. When you bite into it, you get the flavor of honey from the glaze and a thin crisp texture from the crusting, balanced with creaminess of the icing. Then, when you get to the cake part, you get fluffy and rich textures and a warm nuance of sweet potato pumpkin spice. Um, yas.

Old Fashioned Sweet Potato Donuts (with Honey Glaze) Yield: about 2 dozen
Ingredients:
1 package or 2 1/4 tsp. active dry yeast
1 cup warm milk (110° to 115°)
1 tsp. vanilla extract
1-1/2 cups warm mashed sweet potatoes
3 eggs
1/3 cup butter, melted
2 cups sugar
4 teaspoons baking powder
1-1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon pumpkin spice
6 cups all-purpose flour
vegetable oil for frying
Honey Glaze:
1 teaspoon vanilla
1/4 cup honey
3 cups powdered sugar
enough milk to make a thin icing (about 1/4 cup)
1/4 tsp. salt
3 Tbsp. melted butter
Directions:
1. In a large bowl, dissolve yeast in warm milk. Add sweet potatoes, eggs and butter. Add 2 cups sugar, baking powder, baking soda, salt, pumpkin spice and 3 cups flour. Mix in a stand mixer with a paddle attachment until smooth. Stir in enough remaining flour to form a soft dough. Avoid kneading.
2. Turn onto a floured surface; divide into fourths. Roll each portion to 1/2-in. thickness. Cut with a floured 3-in. doughnut cutter. Place each donut on a sheetpan, cover with plastic wrap and place in the refrigerator for 2 hours.
3. In a deep skillet, heat oil to 375°. Fry doughnuts (about 3 at a time,) until golden brown on both sides. Drain on paper towels.
4. Mix powdered sugar, vanilla, honey, salt, melted butter and gradually add milk until it’s a creamy glaze consistency. Dip each donut half way and allow to drip excess glaze on racks. Allow to glaze to set and serve! Enjoy!
