Got Leftover Kraut? Make Atchara!

Want to know what to do with leftover #Sauerkraut when you make Reubens'? Can your own jars of #Atchara! Atchara is a Filipino pickled dish, usually made out of unripe papaya. I guess it's like the Filipino version of Kimchi, minus the spicyness. Great with barbecue pork and even sandwiches! I love to make my own Filipino version of Banh Mi with this stuff! SO good.

Sauerkraut Atchara

Ingredients:

1 1/2 lbs. sauerkraut

2 cups brown sugar

1 cup vinegar

3 cups water

1 tbsp. garlic

1/2 cup bell peppers

1/2 cup ginger, julienne

1/2 a large onion or 1 small onion, sliced

1/2 sliced carrots

1 tsp. salt

1 tsp. pepper

Directions:

1. Squeeze sauerkraut in a wash cloth or cheese cloth and drain.

2. Mix veggie ingredients (except vinegar, sugar water, salt and pepper) and place in a mason jar.

3. Bring vinegar, sugar, water, salt and pepper to a boil.

4. Pour liquid over sauerkraut mixture until it reaches the top.

5. Seal and can accordingly. Refrigerate if not canning.

The longer it pickles in the fridge or on the shelf, the yummier it gets! Enjoy!
