Honey Sesame Cashew Almond Broccoli Salad

Ingredients:

  • 2 heads fresh broccoli, cut into pieces.

  • 1/2 cup chopped green onion

  • 3/4 cup raisins and/or cranberries

  • 3/4 cup sliced almonds

  • 3/4 cup cashews

  • 3 tbsp. toasted sesame seeds

  • 1 cup grated, Sharp Cheddar Cheese. (I like to use 3 year vintage aged Sharp White Cheddar. SO good).

  • 4 tbsp. honey

  • 1 cup mayonnaise

  • 1/4 cup white sugar

  • 3 tablespoons apple cider vinegar

  • 3 tbsp. sesame oil

  • salt and pepper to taste

1. Whisk honey, mayo, sugar, apple cider vinegar, sesame oil salt and pepper in a bowl. Keep tasting the dressing and play around with the flavors; if it needs more zing, add a lil' bit more vinegar and so on; you know what tastes good.

2. Just pour the mixed dressing on top of your washed broccoli and mix.

3. Add nuts, dried cranberries, raisins, green onion, cheese and toasted sesame seeds. This salad tastes better the day after it's been chilling in the fridge, but just as amazing when you eat it right away. Enjoy!
